01 - Line a baking sheet with parchment paper and insert a wooden skewer or lollipop stick into each marshmallow.
02 - Combine chocolate and coconut oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring between each, until completely melted and smooth.
03 - Hold each marshmallow by the stick and dip halfway into the melted chocolate, allowing excess to drip off.
04 - Immediately sprinkle the chocolate-dipped area with assorted sprinkles while coating is still wet.
05 - Place coated marshmallows upright on the prepared baking sheet. Allow to set at room temperature for 15–20 minutes or refrigerate for faster setting. Serve immediately or store in an airtight container for up to 2 days.
