Watermelon Granita Summer Bliss (Print)

Light, icy watermelon treat perfect for summer. Sweet, fruity, and incredibly simple to make.

# Ingredient list:

→ Fruit Base

01 - 5 cups seedless watermelon, cubed
02 - 1 lime, juiced (approximately 2 tablespoons)

→ Sweeteners

03 - 1/3 cup granulated white sugar

→ Optional Flavor Enhancements

04 - 2 tablespoons fresh mint leaves, finely chopped

# Directions:

01 - Place watermelon cubes into blender. Add fresh lime juice and granulated sugar. Blend on high speed until completely smooth and no chunks remain.
02 - Taste mixture and add additional sugar if preferred. If using mint, stir chopped leaves into blended mixture until evenly distributed.
03 - Pour blended mixture into shallow freezer-safe baking dish. Spread evenly across surface using spatula for uniform freezing.
04 - Place dish in freezer for approximately 90 minutes. Remove and use fork to scrape surface thoroughly, breaking up ice crystals that have formed.
05 - Return dish to freezer. Every 30 minutes, remove and scrape entire surface with fork. Repeat this process for 3 to 4 hours until mixture becomes light, fluffy, and grainy throughout.
06 - Scoop granita into pre-chilled glasses or bowls. Optionally garnish with fresh mint sprigs or grated lime zest before serving immediately.

# Expert Tips:

01 -
  • Its like eating a chilled watermelon cloud that somehow tastes more intense than the fruit itself
  • The scraping process is oddly satisfying and perfect for when you need a kitchen meditation
  • It keeps for weeks so you can pull out spoonfuls whenever the heat hits
02 -
  • Do not skip the scraping step or you will end up with a solid block of flavored ice instead of those signature fluffy crystals
  • A metal fork works better than plastic for breaking up the ice crystals
  • The mixture expands slightly as it freezes so do not overfill your baking dish
03 -
  • Strain the blended mixture through a fine mesh sieve if you want an absolutely silky smooth texture
  • Room temperature watermelon blends more easily than cold straight from the fridge
  • Use the ripest watermelon you can find since freezing will mute the sweetness slightly
