03 - 1/4 cup brown sugar
04 - 2 tbsp unsalted butter, melted
05 - 1 tbsp freshly squeezed lemon juice
06 - 1/2 tsp ground cinnamon

08 - 1/4 tsp salt
09 - 1 tsp vanilla extract

→ Cobbler Topping

11 - 1/2 cup granulated sugar
12 - 1 1/2 tsp baking powder
13 - 1/4 tsp salt
14 - 1/2 cup whole milk
15 - 1/3 cup unsalted butter, melted

# Directions:

01 - Preheat the oven to 350°F (175°C).
02 - In a large mixing bowl, gently toss the banana slices with granulated sugar, brown sugar, 2 tablespoons melted butter, lemon juice, cinnamon, nutmeg, salt, and vanilla extract until evenly coated.
03 - Spread the banana mixture evenly into a greased 8-inch square baking dish.
04 - In a separate bowl, whisk together the flour, 1/2 cup granulated sugar, baking powder, and 1/4 teaspoon salt. Stir in the milk and 1/3 cup melted butter until just combined; do not over-mix.
05 - Spoon the cobbler batter evenly over the banana mixture. Gently spread to cover most of the filling.
06 - Bake for 35 to 40 minutes, or until the topping is golden brown and a toothpick inserted into the crust comes out clean.
07 - Let the cobbler cool slightly before serving warm. Optionally, top with vanilla ice cream or whipped cream.

# Expert Tips:

01 -
  • It turns spotted bananas that you would otherwise toss into a rich, caramelized goldmine of flavor.
  • The combination of a soft, custard-like fruit layer and a golden, cakey topping is pure comfort.
02 -
  • Avoid using green or bright yellow bananas as they lack the necessary sweetness and soft texture.
  • Do not overmix the cobbler batter or it will become tough and dense rather than tender.
03 -
  • Place a baking sheet on the rack below the cobbler to catch any sugary drips that might burn in your oven.
  • If the top is browning too fast, tent the dish loosely with foil for the last 10 minutes.
