03 - 1 cup cherry tomatoes, halved
04 - 1/2 cup red onion, finely diced
05 - 1 cup canned black beans, rinsed and drained

10 - 1 tablespoon olive oil

11 - 1 ounce taco seasoning (1 packet)

# Directions:

01 - Heat olive oil in a skillet over medium heat. Add ground beef and cook, breaking up with a spoon, until fully browned, about 5 to 6 minutes. Drain excess fat.
02 - Add taco seasoning and 1/4 cup water to the skillet. Stir to combine and simmer for 2 to 3 minutes. Remove from heat and allow to cool slightly.
03 - In a large salad bowl, combine chopped romaine lettuce, cherry tomatoes, red onion, black beans, corn, and shredded cheddar cheese.
04 - Add warm seasoned beef and crushed Doritos to the vegetable mixture.
05 - Drizzle with ranch dressing or dressing of choice. Gently toss until all ingredients are well coated and evenly distributed.
06 - Serve the salad immediately to maintain chips’ crispness.

# Expert Tips:

01 -
  • This salad isn’t shy about flavor or texture—for once, the chips steal the spotlight in the happiest way.
  • It’s a forgiving, mix-and-match meal you can throw together even when conversation (or chaos) distracts you.
02 -
  • If you mix the Doritos in too early, they’ll turn soggy surprisingly fast—I learned that after one long phone call distracted me.
  • Switching up the dressing can totally change the mood: tangy Catalina gives it a party vibe, while ranch keeps things creamy and comforting.
03 -
  • Wait until the very end to crush and mix in the Doritos—every minute counts for crunch.
  • Try blending ranch with a little salsa for a cool, spicy dressing everyone talks about afterward.
