01 - 1 medium zucchini, diced
02 - 1 red bell pepper, chopped

15 - 1 tablespoon olive oil
16 - 1 tablespoon maple syrup or honey

18 - 1 small garlic clove, minced

# Directions:

01 - Preheat oven to 425°F. Line a baking sheet with parchment paper.
02 - In a large bowl, toss zucchini, bell peppers, red onion, and carrot with olive oil, oregano, smoked paprika, salt, and pepper. Spread vegetables evenly on the baking sheet.
03 - Roast for 25-30 minutes, stirring halfway, until vegetables are golden and tender.
04 - In a saucepan, combine quinoa, vegetable broth, and a pinch of salt. Bring to a boil, reduce heat, cover, and simmer for 15 minutes, or until liquid is absorbed. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork.
05 - Whisk together tahini, lemon juice, olive oil, maple syrup, minced garlic, water, salt, and pepper until smooth. Add more water for desired consistency.
06 - Divide quinoa among bowls, top with roasted vegetables. Drizzle with lemon-tahini dressing. Garnish with feta, pumpkin seeds, and parsley.
