01 - In a medium bowl or sealable jar, combine the lemon juice, Dijon mustard, honey or maple syrup, minced garlic, sea salt, and black pepper. Whisk thoroughly until all ingredients are fully incorporated and the salt has dissolved.
02 - While whisking continuously, slowly drizzle the olive oil into the mixture in a thin stream. Alternatively, add the oil to the jar, seal tightly, and shake vigorously until the dressing becomes creamy and fully emulsified with a uniform consistency.
03 - Taste the dressing and modify the seasonings according to preference. Add additional honey or maple syrup for sweetness, extra lemon juice for acidity, or more salt and pepper as desired to achieve balanced flavor.
04 - Use the dressing immediately or transfer to an airtight container and refrigerate for up to one week. The oil may solidify when chilled; bring to room temperature and shake or stir well before each use to re-emulsify.
