Lavender Glaze (Print)

A fragrant floral glaze featuring delicate lavender notes, ideal for drizzling over cakes, scones, or cookies.

# Ingredient list:

→ Lavender Milk

01 - 2 tablespoons dried culinary lavender
02 - 1/4 cup whole milk or dairy-free alternative

→ Glaze Base

03 - 2 cups powdered sugar
04 - 1 teaspoon lemon juice, optional

# Directions:

01 - Combine milk and dried lavender in a small saucepan. Heat gently over low heat until just steaming, approximately 2 minutes. Do not boil. Remove from heat and let steep for 5 minutes to extract floral flavor.
02 - Pour mixture through a fine-mesh strainer to remove all lavender buds. Allow strained milk to cool slightly before mixing with sugar.
03 - Whisk powdered sugar with 2.5 to 3 tablespoons lavender-infused milk in a mixing bowl. Add lemon juice if using. Continue whisking until completely smooth and pourable consistency is achieved.
04 - If glaze is too thick, add more lavender milk 1 teaspoon at a time. If too thin, incorporate additional powdered sugar 1 tablespoon at a time until desired texture is reached.
05 - Drizzle or spread glaze evenly over cooled baked goods. Allow glaze to set for at least 10 minutes before serving or storing.

# Expert Tips:

01 -
  • It transforms ordinary baked goods into something that feels like a French pastry shop creation
  • The floral flavor is subtle and sophisticated, not overpowering or perfumey
02 -
  • Overheating the milk can make the lavender taste bitter and soapy, so keep the heat gentle
  • The glaze thickens as it sits, so make it slightly thinner than your ideal consistency
03 -
  • Grind the lavender slightly with a mortar and pestle before steeping to release more flavor
  • Warm your powdered sugar slightly in the microwave for 30 seconds to help it dissolve more smoothly
