- Preheat your oven to 350°F. Line two large baking sheets with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy, about 2-3 minutes.
- Beat in the eggs one at a time, then add the vanilla extract. Mix until well combined.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix.
- Scoop out large 1/3-cup portions of dough and roll into balls. Place them spaced apart on the prepared baking sheets.
- Gently press each dough ball into a thick, flat disc about 3/4 inch thick.
- Bake for 13-15 minutes, until the edges are set and the centers look slightly underbaked.
- Allow cookies to cool on the baking sheet for 10 minutes, then transfer to a wire rack to cool completely.
- Beat the butter until creamy. Gradually add powdered sugar, continuing to beat until smooth. Add heavy cream, vanilla, pink food coloring, and a pinch of salt. Beat until light and fluffy, adding more cream as needed for a spreadable consistency.
- Once cookies are completely cool, generously frost each cookie. Chill the frosted cookies in the refrigerator for at least 30 minutes before serving for authentic chilled texture.
